Rainbow Roasted Veggies

This is one of my favourite quick and easy to make dishes. All you need to do is take a whole lot of different vegetables, wash, peel and chop them, season and roast.

Takes no time at all and is great to have for dinner with leftovers for lunch the next day.

For this specific batch I used:

2 Red Bell Peppers

1 Red Onion

2 cups of Brussels Sprouts

Large handful of Broccoli and Cauliflower florets

1 Aubergine

5 cloves of Garlic

1 Sweet Potato

Fresh Rosemary

Coconut Oil

Salt, Paprika and Pepper

Heat the oven to bake at around 180 degrees (fan assisted)

Put the chopped veggies in a roasting pan, cover them in oil (I melted my coconut oil first)

Season with Salt, Pepper, Paprika and Rosemary

Roast them for about 35 mins.

Serve with Hummus and optional Avocado OR Goat Cheese.
